The floral aroma is of lemon curd and jasmine. The palate is complex with lemon and brioche, and nuttiness, a strong acid backbone. It is minerally, fine boned and structural.

Whole-bunch pressed, wild-yeast fermentation and 12 months in French oak (55% new). Buttered sourdough, caramelised apples and lemon balm. This has plenty of orchard fruits compacted into its taut framework. The tightwire acidity, creamy mlf and nutty praline finish make for intriguing components of a full-bodied wine. Grated nutmeg, puff pastry and sandalwood linger on the finish.
